It is a well-known and valued mushroom, considered the best of the Pleurotus genus. It is classified as follows:
MORPHOLOGY
The cap is not too large. An adult may range between 5 and 10 cm in diameter. It is convex, but only when very young and soon tends to flatten out, sometimes even acquiring a slight central depression. Its colour is certainly variable. We have collected specimens ranging from very dark brown and to light ochre. The surface is slightly flaky when young and later smooth. Young specimens have a rolled edge which becomes wavy in adults.
